Mealtime: Tehina

Back in the States, a meal begins with bread and butter. Here in Israel, the meal begins with bread and Tehina. Tehina is a dip made from sesame seed paste which is combined with lemon juice  from one lemon, minced garlic, salt, pepper, water, and chopped parsley. To make the dip, you take the raw sesame seed paste and whisk the lemon juice and water into it until it comes pale and creamy. When the Tehina becomes pale, you add the minced garlic and spice. Combine the garlic and spices. Garnish with the chopped parsley and serve with bread for dipping. If you like the taste of sesame, you will like Tehina.
