If you did not know, oranges were a very important part of the economy of Jaffa and the area around Tel Aviv. The Jaffa orange, which takes its name from the city, was a major source of revenue for the area and for the State of Israel. This recipe uses the famous Jaffa orange.
Ingredients
orange juice
diced orange peel
one orange chopped into chunks
olive oil
sesame oil
sesame seeds
chicken legs and thighs
one chopped onion
3 chopped cloves of garlic
oregano
chopped green chili
honey
Method:
In a pan, brown the chicken parts. When both sides of the chicken are browned, take out and saute the onions until they turn translucent. Then add the orange peel, garlic, and chili and cook for about 2 minutes. Then add the sesame seeds and cook for about a minute. Next add the sesame oil, just about a tablespoon will do. Then add the honey and cook until the honey is mixed thoroughly. Then add the orange juice and reduce by about half. In a roasting pan, place the browned chicken parts and the sauce. Cook at 375 degrees Fahrenheit for a hour. To finish the dish place under the broiler to get the top crispy. Serve with a side of rice, and vegetable of your choosing. I guarantee you will love it. Enjoy!
