One of the ubiquitous herb mixtures used in Israel and in the Middle East is Zaatar. Zaatar is a dried mixture of thyme, marjoram, salt, sesame seeds, and oregano. It may also have sumac in the mixture depending on who is making the mixture. It is delicious sprinkled on grilled meat, vegetables, or hummus.There is also a delicious bread found in bakeries here that have zaatar sprinkled on top of it. The bread is very similar to pita, but without the pocket. This recipe uses zaatar on simple oven roasted potatoes.
Ingredients:
3 medium sized potatoes
1 sweet potato
2 chopped cloves of garlic
zaatar
1 small onion sliced
olive oil
salt
pepper
Method:
Cut the potatoes into wedges. Then slice the onion. After the onion is sliced chop the garlic. In a bowl mix the vegetables with the zaatar, olive oil, salt and pepper. Make sure that the potatoes are thoroughly coated in zaatar and olive oil. Then line on a foiled baking sheet and place in a 400 degree Fahrenheit oven for 15 minutes. After 15 minutes, flip the potatoes so each side becomes golden brown and delicious. Cook for another 15 minutes until the potatoes are golden brown and delicious on both sides.
