Mealtime: Gnocchi with tomato sauce

I love to eat gnocchi. The texture of the gnocchi is what I love. They are soft, doughy, and delicious. They ware certain to make a brick in your stomach. Gnocchi are a type of dumpling made from flour, cheese, or potatoes mixed with eggs. They go exceptionally well with homemade tomato sauce. For this recipe I used pre-made gnocchi because I did not have the time to make them from scratch. The tomato sauce however is homemade and delicious.

Ingredients:
two tomatoes, grated
one onion chopped
three minced cloves of garlic
diced green chili
tomato paste
water
salt
olive oil
oregano
gnocchi

Method:
In a sauce pot, saute the chopped onion in  olive oil until it turns translucent. Then add the minced garlic and green chili. If you do not have green chili, you may use red chili flakes. Cook until both the garlic and the chili soften which should take two minutes. Then add the tomato paste and cook until the tomato paste is mixed thoroughly. Add salt and the oregano and cook for a minute. Then add the grated tomato and cook for another two minutes. Once that is done, add about a cup of water and let it reduce. In another pot, boil the gnocchi. The gnocchi are done when they float. Drain the gnocchi and place in serving bowl. When the sauce reduces, ladle the sauce over the gnocchi until it is coated with the sauce thoroughly. Serve with a drizzle of olive oil and a ton of grated Parmesan cheese. It goes well with a side salad and some bread. Enjoy!
