Ingredients:
sliced red onion
dried oregano
sliced carrots
crushed garlic
water
tomato concentrate
penne
sliced zucchini
olive oil
salt
pepper
Method:
First slice the onion so it is strips. With the zucchini and the carrot as well you should slice them into strips. In a saute pan, saute the zucchini strips until tender. When the zucchini is tender take the zucchini out of the pan. Add the onions and carrots. Saute for about 4 minutes. Then add the dried oregano and crushed garlic. When fragrant add the tomato concentrate and spread it through the mixture evenly. When the tomato concentrate is thoroughly mixed add the water and mix in with the mixture. On the side you should be boiling some penne pasta. When the pasta is al dente add some of the pasta water to the sauce so it can thicken. Then add the al dente pasta to the sauce along with the cooked zucchini and make sure to thoroughly mix the sauce with the pasta and zucchini. Serve in a big bowl or on a plate with grated Parmesan and some garlic bread if you choose. You can easily add chicken or anything else to the pasta. The next day I added some cooked kebabs, or beef sausages and it was delicious. It is an easy recipe to manipulate the way you want it to taste like. בתאבון bon appetite!
